Bangalow Cheese Company
Cheesemaker Justin Telfer learnt his craft at Melbourne University under the guidance of renowned cheese expert, Neil Willman. Justin’s talent and abilities were quickly recognised. At the 2008 Brisbane Cheese Awards Justin's “Byron Bay Blue” was awarded the trophy for Best Blue Vein Cheese. At two Regional Shows in Gippsland, Victoria, Justin’s Blue Cheeses won “First Prize” and “People’s Choice”, and he was awarded a Gold Medal for Washed Rind Cheese at the 2004 Australian Specialist Cheesemakers Association Awards.

Meet Justin and sample his fine hand made cheeses in farmhouse styles. Justin believes in creating a natural product, free from stabilisers, preservatives and standardisation of the milk. The aim is to create cheeses with real flavour – seasonal variations are encouraged, as are subtle variations from batch to batch!

Samantha grew up on the family macadamia plantation in Brooklet, a quiet little rural area in the hills behind Byron Bay. Being of Maltese origin, Saghtar (pronounced Saa-tar) is Maltese for the Wild Thyme that grows over Malta’s sun drenched islands.

Samantha combined her heritage, love of the land and the hand planted macadamia trees that her family planted with her love of food. Samantha has created a unique and truly delicious range of hand made flavoured macadamia spreads and pastes with a Mediterranean twist.

Scott Foster describes himself as a gourmet foodie and entrepreneur. He is also the founder of Australian Bush Spices. A former restaurateur, Scott was introduced to the flavours of the Australian bush in the late 1990's. He followed his instincts and his nose to Byron Bay, an area with an abundance of native ingredients and lush organic produce. After several years of experimentation, Scott launched his unique range of six Australian Bush Spice Blends in 2008. Scott loves to share his passion for food and enjoys showcasing the distinct natural flavours you can achieve by using native spices and ingredients.
